Rumour has it that professional chefs would rather jump off a cliff than share their secrets, that Italian Nonnas closely guard their tomato sauces; and that China (the 3rd largest country in the world) is eager to share a million and one dishes. Bless them!

And so…

Why not pass on your heritage and your secrets? After all, no one will create an identical dish unless they work in a science laboratory… all of us will put our own stamp on a meal no matter how hard we try to copy the original. And where is the fun of discovery even if we could?

Nothing you cook should be labelled ‘inauthentic’… recipes are old and typical, but what is wrong with a new interpretation? Yes, things go wrong but so what? Just keep going, and build your skills. Pick your friends…

Our Indian cookery secrets

So it is that Agnelo and I decided to share what has been handed down to us from family members and friends living in Goa, the UK, South Africa. ALL of them have contributed something to the traditional ingredients, tastes and aromas of India – that huge sub-continent of Asia which produces so much of what we now appreciate in Australia.
